What you’ll need:

  • 2 Cups of 2% Reduced-Fat Milk
  • ¾ Cups of Dark Brown Sugar
  • ¼ Cup of Cornstarch
  • 2 Large Eggs
  • 1 Cup of Canned Pumpkin
  • ¼ Teaspoon of Salt
  • ¼ Teaspoon of Pumpkin-Pie Spice

How to prepare the delicious masterpiece:

  • First, start by whisking the milk, sugar, and cornstarch in a saucepan and bring the mixture to a boil. Once it begins to boil, let it sit on the flame for 3 minutes while you whisk consistently.
  • Next, whisk the eggs in a bowl. Slowly add half of the hot milk mixture to the eggs and place the mixture back in the saucepan. Cover for 3 minutes. The mixture should be thick by now. Do not forget to consistently whisk the mixture!
  • Remove the mixture from the heat once thickened, and add the pumpkin, salt, and pumpkin-pie spice to the mixture.
  • Finally, spoon even amounts into custard cups and let chill for 30 minutes.
  • Once the pudding has set, serve, and enjoy!
